Honey Goat Cheese and Pecan Stuffed Dates

I am not sure whether this dish falls under the category “Desserts” or “Appetizers”. It is definitely a little bit of both! Made with only three ingredients, it is an easy, quick, and delicious little bite. It is also a perfect snack to have on hand if your New Year’s resolution was to cut down on refined sugar. The first time I made these, I used plain goat cheese and a little bit of honey. If that’s what you have on hand, simply let the cheese come to the room temperature and stir in honey. Start with a small amount and add more as needed. It is a perfect combination of sweet honey and tangy goat cheese.

This time, I made things even easier by buying honey flavored goat cheese, which already has a perfect amount of honey in it. This took the total time to make these down to about 15 minutes. I also tried making these with maple & bourbon goat cheese and it was just as good.

To Make Stuffed Dates

Makes 16 halves (individual servings); Total time – 15-30 minutes.

Let the goat cheese come to room temperature for about 15 minutes. It is purely to make “stuffing” dates easier, as the cheese will soften up. Skip this step if you are short on time.

Cut the dates in half and remove the pits. Scoop half a teaspoon of goat cheese and “wipe” it off the spoon with the halved dates.

Top with a half of pecan and press down slightly.

Repeat with the rest of the dates.

If not serving immediately, store in an airtight container in the fridge for up to a day.
